2 large or extra large eggs
2 tablespoons matzah meal
1 tablespoon grape seed, extra virgin oil, or butter
Season to taste
Beat eggs in a bowl adding seasons to taste. Add matzah meal 1 tablespoon at a time beating in between. Let mixture sit for 5 minutes. Heat oil or butter in an omelet or saute’ pan over medium heat. When oil is warm add egg mixture and reduce heat. Cook slowly until top is firm. Turn over to cook other side. Serve hot.
