Flourless Chocolate Cake


2 Cups semisweet chocolate

1 Cup superfine sugar

3/4 Cup boiling water

2 sticks butter cut into cubes

6 eggs separated

1 teaspoon instant coffee

1 tablespoon vanilla extract

Grease an 8 or 9 inch springform pan and preheat oven to 350F. In a large food processor, pulse chocolate and superfine sugar. Add the boiling water, butter, egg yolks, coffee, and vanilla extract. Whisk egg whites until stiff and add them to the mixture in the food processor and blend for 10 seconds or so. Pour the mixture into the pan and bake for 45-55 minutes. The cake will crack significantly and fall. Let it cool and place it in the fridge for a few hours or overnight.
