Passover Dinner Rolls

Yield 12 rolls

Ingredients:

2 cups matzo meal (not cake meal)

1/2 teaspoon salt

1/2 teaspoon sugar

1 cup water

1/2 cup vegetable oil

4 eggs

Preheat oven to 375 degrees. Use parchment paper on a cookie sheet or lightly grease it. Combine matzo meal, salt, and sugar in a large mixing bowl. Bring water and oil to a boil. Pour the boiling water over the dry ingredients. Stir till blended. Let cool a little, approximately 3 minutes. Using a hand mixer, beat one egg at a time into the mixture. Let stand 15 minutes. Using a large spoon, place a large heaping scoop onto the cookie sheet. Place about 2‖ apart (like cookies). Bake at 375 degrees for 50 minutes.

Bake the full time. Don’t peek as you can cause them to deflate. You can cut a little slit in the top so rolls won’t deflate after baking. Store the rolls in an airtight bag or container.
