Chicken Liver Pâté

Chicken Liver Pâté

Makes approximately 3 1/2 cups

Ingredients:

2/3 cup chicken livers

1 1/3 cups chicken thigh meat

4 hard boiled eggs

1/2 to 1 cup raw almonds

4 TBSP mayonnaise

2 TBSP minced garlic

1 tsp basil

1 tsp tarragon

1 tsp seasoned salt or salt

1/4 tsp pepper

1/4 tsp nutmeg

1/4 tsp cardamom

Use about 1/2 pound of chicken livers and 2-3 chicken thighs or other dark meat. Rinse chicken livers. Place in saucepan and cover with water. Bring to a boil, turn down fire, and cook till done, approximately 20 minutes. Rinse chicken thighs. Place in saucepan and cover with water. Bring to a boil, turn down fire, and cook till done, approximately 20-30 minutes.

Drain meat and chop.

Combine chicken livers, chicken thighs, eggs, mayonnaise, garlic, basil, tarragon, salt, pepper, nutmeg, and cardamom in food processor. Process till well blended. Add almonds and process till almonds are small chunks. Try it and adjust mayo and spices to desired consistency and taste.

Scoop out into serving bowl and sprinkle paprika on top.
