 2 medium tomatoes, chopped

1 bunch green onion, chopped

2 cloves garlic, minced

1 can (15.8 oz) purple hull peas, rinsed and drained (can use black-eyed peas)

1 can (15.8 oz) white hominy, rinsed and drained (can use yellow hominy)

1 jar (8 oz) picante sauce

½ cup cilantro, chopped

3 tablespoons fresh lime juice

½ teaspoon salt

Stir together all ingredients in a large bowl. Cover and refrigerate for 8 hrs. or overnight to let flavors meld. Serve with tortilla chips. Adjust garlic, cilantro, and lime juice to your taste. Also, if you like it hot you could use “hot” picante sauce or add fresh chopped jalapeño peppers. Great served with fresh avocado slices.

Makes 6 servings.
